Our restaurant in Völs am Schlern prides itself on a culinary tradition rooted in the mountainous heritage of our region while embracing the broad culinary perspectives of the Mediterranean, the plains, and the rolling hills. Beneath our restaurant in Völs am Schlern lies the “Fumoir” wine cellar, in a space that originally served as Grandpa Sepp’s butchery and smokehouse. A skilled butcher, he once prepared smoked speck for the local villagers here. The aged walls of the cellar still emanate the rich scent of South Tyrolean sausage, a testament to its storied past. This very cellar was a cherished retreat for Meinhard’s late father, as well as the place where Grandma Maria, a passionate innkeeper, delighted in serving guests her spicy speck alongside fine wine. In honour of our ancestors, we’ve revitalised this cellar, transforming it into a dedicated wine sanctuary. It now hosts a grand table perfect for intimate gatherings, offering a haven for relaxation and connection within its uniquely historic ambience, far removed from the bustle of daily life.
